From performance powder to coffee and tea, chocolate, jerky, and the plain-old dried-out variety, mushrooms are blooming. Last year, Food Dive reported that the global mushroom market will jump to about $69.3 billion at the end of 2024, a huge increase from $34.1 billion in 2015. As more customers seek plant-based options for their diets, 'shrooms will continue to boom.

And on that note, in this week's “As Seen on the Shelves” we snapped a few mushroom products on the shelves at Erewhon in Los Angeles, Sprouts in Scottsdale, Ariz., and Lakewinds Co-Op in Minneapolis.
